The Art of Combination is an expert’s road map through the fascinating world of Chinese food mixtures. To the connoisseur, when diverse foods are brought together in combinations, the purpose is to heighten the taste, form, and appearance of the principal ingredient and of the completed dish. In this article, the cook is urged to substitute creatively when following a recipe, to invent her own combinations. It is clear, however, that not all mixtures are ideal; and that certain principles, stated or instated, are at work when the Chinese cook decides precisely what vegetable they will use, and in what quantity, to transform, say, a handful of shrimp into a masterpiece.

Roast beef, grilled steak, fried chicken are “autonomous” dishes that require little or no admixture; but a

Chinese menu takes in the whole gamut of cookery methods, and a single dish may bring together four to seven different foodstuffs. Variations lead to constant creation of new dishes, which explains the many schools of cooking in China.

Occidentals are always surprised to discover that lobster and chicken livers make a superb pairing. Or that

poultry, pork, and, seafood combine well. Chicken and ham complement each other miraculously. How does one make such decisions? The scientific mind can deduce some underlying rules that cover most cases.

The Vegetable Kingdom

The heart of the mixing problem is to decide what will mix well with meat. No Chinese would think of mixing

Two kinds of “red” meat, such as beef with mutton, or lamb with pork. They simply do not seem to blend, perhaps because they all belong to the land animal family, as distinct from birds and fish. Better marriages are made by going further a field. The vegetable kingdom is the richest source of culinary partners.

The basic vegetables in Chinese cuisine are:

Bamboo shoots

French beans

Snow peas

Young peas or petits pois

Mushrooms, dried or fresh

Green peppers

Bean sprouts

Broccoli stems

Chinese broccoli (gai laan choy), the leaves of which may also be used

Asparagus tips

Kohlrabi

Cabbage

Onions

Water chestnuts

Aubergine (eggplant)

Turnips

Almonds

Bean curd

Chinese pickled mustard plant (called pickled or salted gai Choy)

Observe the omission of carrots, cucumbers, and cauliflower. These are eaten by the Chinese, but generally as separate dishes rather than in mixtures. A carrot is too sweet for mingling in Chinese food except where a “sweet and sour” sauce is used. Cucumbers have a high water content that would make a mixture too soupy. Cauliflower cannot be cut readily into the slices, strips, or cubes necessary for quick cooking and to match the size and shape of other ingredients.

The two queens among mixers are bamboo shoots and water chestnuts. They perform as catalysts, marrying the flavors of anything they are combined with, while not having too much taste of their own. It is their texture that is perfect. Bamboo shoots do especially well in stir-fried mixtures (ch ao) or in stews (mun). Water chestnut, cut in slices, is a desirable ingredient in chop suey making the difference, in fact, between a mediocre vegetable dish and one that is very fine. Minced water chestnut is excellent in meatballs and even better combined with minced shrimp.

To Be Sung Upon the Water/Seven Sonnets of Michelangelo : To Be Sung Upon the Water” (Barcarolles and Nocturnes for High Voice, Piano and Clarinet) is a work in praise of nature. The work is also intended to be a tribute to Franz Schubert, a fellow-admirer of ponds, millwhells, streams, trout, swans and other aquatic phenomena, the tribute acknowledged not only in the title of this cycle (one measure of Schubert’s AUF DEM WASSER ZU SINGEN is “borrowed” to set the text: The image of a poet’s heart), but in the instrumental similarity to his SHEPHERD ON THE ROCK as well.

The “Seven Sonnets of Michelangelo”, Op.22, written for Peter Pears, were composed in 1940 while Britten was in America. Departing from his earlier settings of English texts, he undertook certain continental stylizations, broadening, through the use of this continental idiom, his own distinctive style. The sonnets, therefore, are the most fully realized of the European and Italian character and are recognized as the “songs in which he seems to come to maturity as a song composer.” The Michelangelo Sonnets all deal with love, the lover and his beloved. In Britten’s extremely sensitive settings they cover the gamut of contrasting moods, varying tempi, alternating keys. As Ernest Newman wrote after their first performance. “They are striking and varied in this expressive quality.”

Most people do not realize what makes the difference between a fabulous celebration party and one where the guests leave early.

It’s the person who really is in control of the entire party. It’s the Master of Ceremonies. This person usually is the DJ or leader of the band. This persons job is to keep everything on schedule as planned and to make sure the guests are enjoying themselves.

Therefore, making the right choice as to who will be your Master of Ceremonies is critical. Anyone can say they are a D.J., but it takes much more than just having a library of CDs and a sound system. Even having lights and smoke will not make up for someone who has a boring personality and does not understand what you want and what is good for your guests.

Have you been a guest at a Quinceanera and everything was perfect, but the choice of music was so bad and too loud, you got a headache?

When choosing a Disc Jockey and or a Master of Ceremonies some of the areas to check out are the following:

Does the person have an outgoing personality?
Do they have a good sense of humor?
Do they ask you questions about your guests and what you want at your fiesta?
Or do they say they have done so many parties they know what people want. If so stop right there a move on to the next person.
It’s a major task to find the best person to be your Master of Ceremonies. Sure there are lots of D.J.s and bands out there, but there are few good performers. They usually are booked up as early as 6 to 8 months ahead of time. The outstanding master of ceremonies is in high demand. You will need to book them early.

If you wait till the last minute, you might get lucky if someone cancels out. That is not the norm. Therefore, not planning ahead will place you in a poor negotiating situation. More than likely you wont be able to hire an outstanding Master of Ceremonies, nor get a good deal.

A disk jockey must also have a large musical library and the best equipment. When interviewing and before booking them find out if they will give you permission to check out a live performance they are performing at.

A Live Band with a great Master of Ceremonies can be very entertaining.

Remember, the announcer at your party is the person who really has the control of your celebration. Make sure you pick the right person.
If you cant see a live performance then listen to the D.J. and or groups demo tape Ask for three recent references you can call.
Do they play the kind and style of music you and your family like?
Do they appear to be easy to work with?

Don’t Hide, Ask

When you aren’t happy with a product or a service, what do you do? Are you a screamer? Do you yell at the desk clerk for a discount because your room didn’t have enough soap? Do you think the world is full of idiots? Are you like me and just walk away vowing never to come back? I have on rare occasion blogged about my issues with other business and only once did I ever hear about it. Intuit had a rep track me down to help fix my Quickbooks issues.

I stopped blogging about negative experiences by name a little while ago. I wish I could say a long time ago. Now I am trying to blog by the adage “If you don’t have anything nice to say, don’t say anything at all”. Occasionally a reference will slip in here or there, and I am trying to quit. I used to start some of my magazine articles out with a reference to a bad situation, and work it in to a positive result. The negative starts were a method to connect to the reader so I could lead them to an answer. That practice stopped when a couple of editors turned away my work for being negative.

Looking back I am impressed that Intuit actively seeks out unhappy customers on the web to try and fix the issues. There is a lesson here that most leaders and small business owners forget.

If you want to know, you have to ask. Intuit asked.

Let’s think about this for a moment. If you want to know what you kids are doing after school, you have to ask. You can’t just ask once, you need to ask every day. The same is true for the rest of your family. It is also true in business. If you really want to know what your customers think of your business, or want to know how you did, just go ask them.

We all know this is a lot harder than it sounds or everyone would do it. When an employee quits, the exit interview is the very best time to understand what the company is doing that would cause someone to leave. I know a McDonald’s with several employees that have been there over 5 years. Another chain down the street is filled with fresh faces every time I stop by. Training all of those people doesn’t come cheap. Ask what you need to do to get people to stay. If you want to know you have to ask.

In business the single most important asset is your people. Second is your customers. If your people are not attracting and keeping the customers, you won’t have a business for long. Ask your customers and they will tell you what they like about your people and what they don’t like. Once in a while you get lucky and a screamer comes in and tells the world what you are doing wrong. You just have to be ready to listen. I have to admit during my 25 years as a business owner and leader, I have had more than one customer who “let me have it” verbally. Being open minded and listening to everything they say can be some of the most valuable customer feedback you will ever get. I am also slightly embarrassed to say everything they said was true. All of the events that made them angry really happened. At the point they are screaming at you out loud, they aren’t sugar coating their thoughts. The rest of my customers I have to ask.

This is why employees are so important. If you trained them right and your company has a valid mission, your employees will do three things when they encounter a screamer. First they will listen closely and take notes on everything they say. Second they will make a change that calms the customer or better yet makes them happy. Finally they will use the information the come up with a solution or process so there isn’t another screamer for the same reason. This is why employees are first, customers second. Without your employees, the customers will never come back.

Never once have we finished a project to have a customer say “Gee Scott, this was the most wonderful experience of my life, you made it so easy for us, all we can say is Thank You.” Every time we find out something that we can improve. One of the major things for our residential installation business was the amount of time it takes to install and program a larger system. Many dealers tell me that they do it at the job site so the customers know why 50-70% of their jobs cost is labor. We now try to shop build and program as much as we can. We asked our customers and they told us they didn’t like all the time they had to be there for us to do our job. It turned out they felt we weren’t respecting their time.

We also figured out that a couple of brands weren’t as easy for our customers to use as we thought, and others were more so. Guess what we sell now.

Anyone can take the easy way out at the end of the transaction with the customer and let them leave. The people who want to get better and be more successful will chase them down and ask the questions other people are afraid of. Success is all about the willingness to do what most people won’t. You will be amazed at how fast you can separate yourself from the pack by calling a customer after you have finished the job. Unless the job went really bad, they probably won’t call you.

The willingness to do what others won’t is a major step in separating yourself from everyone else. Start by asking what you can do better. It doesn’t matter what the subject, business, marriage or friendship. Malcom Forbes once said “With all they getting, get understanding.” We get understanding by simply asking questions. The team that Lee Iacocca brought in to run Ford in the 60’s and save Chrysler in the 80’s were called “The quiz kids” because they asked so many questions. From today forward, go out without fear, open up your mind and ask the questions your competitors are afraid to ask. If you don’t ask, you may never know and worse your competitors might ask.

However, after several years in the Commercial Cleaning Industry, I am still amazed at the number of Customers coming to us because they have been let down by their previous cleaning service provider. One common reason sited by majority of the Clients was that they did not pay enough attention to the selection process when they were hiring previous Cleaning Company. Most Clients think, with the plethora of Cleaning Companies vying for their attention on the internet, it would be enough just to pick the one with the most appealing website. To help avoid time and money that could be wasted by not hiring the right cleaning company the first time around. I have decided to write this simple guide on what to look for when choosing a Cleaning Company. Here are the key things to look for in a Cleaning Company:

Is the Cleaning Company Insured?

The first thing you should ask for when you are choosing a Cleaning Company is their insurance policy. You want to be sure that you’re protected from theft or accidental damage. If a Company is reluctant to discuss this with you then you need to look for another provider.

References from Existing Clients

My advice is that you ask for references from their previous Customers, at least 2. This is the best way to find out about the quality of job done by the Company in the past. If a company who claimed to have been going on for years can not provide suitable references then you ought to consider hiring a company who meet this criterion.

While I will recommend you hire a company based on your budget or how much you are willing to spend. They should be willing to disclose how they recruit and the checks they have put in place to make sure they do not hire Cleaners with criminal records. Remember it is your responsibility to ensure the Cleaners are right for you. Make sure they do not send you people who are not legally allowed live, never mind, work in the country. They must have proper interview procedure in place and get identities of would-be Cleaners checked.

Customer Service

What level of customer service and support the Company has to offer? Are they only available during peak business hours? Can you contact them during an emergency? What is the response time if you have any queries? It is important to find a company that has various ways to contact them and respond to your queries as quickly as possible. Are they prepared to send Cleaners back to your house/office free of charge if they have not done a good job? A good Cleaning Services provider should have good customer service in place.

Tasks Guide

The Company should be willing to supply you a task list that you can agree to. This is to make sure all of the details of the deal are in writing - from the services provided to cost of service, tasks to be performed on a regular basis/intervals to the frequency of visits. This shows the company is organised and thorough in its approach.
